
Healthy Strawberries & Cream Protein Pancakes

Serving size: 8 pancakes
Ingredients:
- 1 1/2 cups of oats
- 1 scoop of protein powder (whey, pea, etc.)
- 1 banana
- 2 eggs
- 1 tsp of baking powder
- 1/2 tsp of cinnamon
- 1/4 cup of almond milk
- 1 tsp of vanilla extract
- 1/4 tsp of salt
- 1/2 cup of Greek yogurt
- 1 tsp of honey
- 1 cup of strawberries
Instructions:
- In a blender, combine oats, protein powder, banana, eggs, baking powder, cinnamon, almond milk, vanilla extract, and salt. Blend until smooth.
- Heat a non-stick skillet over medium heat. Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface and the edges start to look set, then flip and cook until golden brown on both sides. Repeat with remaining batter.
- In a bowl, mix Greek yogurt and honey. Serve pancakes topped with the yogurt mixture and sliced strawberries. Enjoy!
